Grilled Fish and White Bean Salad

This is a perfect way to use up leftover grilled fish. Fish that has been cooked with almost any kind of seasoning--even teriyaki sauce--will be great here. Serve the salad on a bed of greens.

2 tbsp. extra-virgin olive oil
2 tbsp. lemon juice
1 tsp. grated lemon zest
coarse salt and pepper
1 1/2 c. skinless grilled salmon or tuna pieces, broken into large chunks
cooked white beans
cooked green beans
grape tomatoes, halved
1/3 c. thinly sliced red onion
1 1/2 tsp. thinly shredded fresh sage or minced rosemary leaves
- In a large bowl, whisk together the oil, lemon juice and zest, and pinch of salt and pepper.
- Measure out 1 tablespoon of the dressing and toss with the salmon in a medium bowl.
- To the remaining dressing in the large bowl, add the white beans, green beans, tomatoes, onion, and sage, and toss well.
- Divide the vegetable mixture among 4 plates and top with the salmon. Serve at room temperature or chilled.
